I think that's more than just an aspect of Lyme disease, it's just a body thing...things will always feel worse the next day.
Every college finals week I would pull all-nighters, running on pure fumes but the exhaustion never set in until it was over (this was before my lyme-like symptoms began, so I'm pretty sure I wasn't affected by anything and my roommate was the same way). When a person works out, they're always sore the NEXT day. I think maybe adrenal glands get depleted as a person pushes themselves and the effect doesn't show until later.
