I was going to say Candida as well. It's known to cause herx like symptoms when the diet is changed. Reducing sugar and carb intake will bring this about.
While changing the diet will help in fighting Lyme, it won't treat Lyme in any way, so no extra or increased Lyme bacteria die off can be expected other than what is 'normal' for the bacteria.
So it kind of comes down to what you were eating, compare to what you are eating now.
Around 97% of the American public (men, women and children) have some form of herpes, so most of us need to assume we have at least those viruses, unless they have been tested and it shows no viruses. I don't know what the numbers are in other countries, but considering how virulent herpes viruses are, I would believe that the numbers wouldn't be much different.
