My go to lately has been this:
Heat some olive oil in a pan.
Season boneless, skinless chicken thighs (both sides) with oregano, thyme, and salt (I don't measure, just sprinkle)
Sear chicken thighs on both sides.
Pour some balsamic vinegar over the chicken, cover and let the vinegar reduce. Turn the chicken a couple times while cooking to coat.
That's it! It's surprisingly yummy (and goes great with grilled veggies)!
