Welcome to the forum. I'm glad you found us - please read the "New to Lyme?" thread at the top of the page - it has valuable information for those just starting on this journey.
I'm glad you're on doxy and have an MD who seems proactive and willing to work with you. But as you'll learn when you start reading up on Lyme, a few week's worth of doxy is likely not going to be adequate and under-treating Lyme and whatever else you probably have, given the frequency of your interaction with ticks. Ticks RARELY carry "just one" microbe like Lyme. Most Lymees are infected with other coinfections, which also need to be treated.
ETA: the breathing issues could be a Lyme issue but very likely due to another infection - babesia causes some weird breathing issues as do a few other infections.
I suggest a couple of actions:

At some point, you might hit a wall with your MD's willingness or ability to continue to treat you (either beyond the standard IDSA treatment protocols, which are woefully inadequate and antiquated) or just doesn't know what to do.

This is also the reason why people often turn to herbal protocols. Although many of us are using a hybrid treatment that includes both antibiotics and herbs.
The one thing you can do right now before working out the next details of your treatment is to start with some detoxing that will help your body process the toxins from the infections and help support treatment, which can also be hard on the body. For many of us, detoxing is AS important as the antimicrobial treatment. There is a lot of good info about
detoxing in that thread but you can also do a search for conversations.
Also, I'll suggest that you really do need to take care of yourself and give your body the chance to heal. Your vacation sounds absolutely wonderful - but I truly hope you don't have a lot of physical activities planned, as your body is maxed out dealing with the infection load(s) and the treatment (as evidenced by your numerous symptoms). The quickest way to relapse is to overdo it, not only ruining your expensive trip, but prolonging recovery and treatment.
