Just found out that the boiling or canning liquid from chickpeas is an amazingly versatile food. It's used to replace eggs (if you have egg problems) but can also provide some amazing fluffy treats as well that can replace dairy-free.
I'm airBnB-ing right now so my kitchen is limited, but in a pinch to have some mayonnaise without stabilizers (possibly corn-derived and the bane of my existence) I discovered this miracle food called aquafaba.
Whipped up some mayo with aquafaba, dry mustard, and ACV. Oh my gosh. Game changer.
Had some left over and whipped it up with honey, cocoa, and tapioca starch... there is soft serve "ice cream" chilling in my freezer now (yes, a sugar-cheat, but I'm on freaking vacation and this diet is killing me)
I was curious about
the nutritional content and if anyone thinks it could be a bad thing for Lyme or Candida? It's a fairly new sensation so not much info exists, so
1. Does anyone have any idea about
how this could be a negative thing
2. Have you freaking tried this?!?! My culinary options just expanded greatly, and I really needed a boost in the midst of this depressing diet!
