I'd try and see an llmd if possible, and like k07 wrote if you can find one that treats both ways that would be ideal. In the meantime, could consider trying to slowly start treating with herbals that you can very carefully titrate and start extremely slowly with treatment so you can keep the responses within reason.
I'm not as familiar with the Jernigan treatments, but I've always liked Buhner and some of the Cowden herbs are very good too (imo) and can easily be titrated since they are tinctures.
I think the Buhner herbs, while they can cause herxing and should be started very carefully and one at a time, tend to be easier to manage since some of them have detox and immune-modulating properties.
I'm not super-familiar with MCAS but I know many patients seem to have similar issues. Have you researched what other MCAS patients with these infections use to make treatments manageable? I imagine there are certain meds and supplements that can prove helpful for some patients with MCAS alleviate the immune system cascades.
