I was looking into this hardcore about a year ago due to some major digestive agony about one hour after eating - I wanted to know where exactly the food was at that point, since the digestive organs overlap so much. I eventually saw GI specialists as well, and they concurred with the internet consensus that it depends entirely on what you eat and the shape that your gut is in. (I know, not helpful at all.) I think that "normal" times based on a standard American diet are not a healthy goal. If you excrete food that doesn't seem to have been digested fully, then that's not a great sign, but otherwise I'd say that relatively fast processing is a good sign. For me, if I don't eliminate completely every morning, then I feel like utter garbage. I eat heaps of vegetables all day.
