have you measured post prandial glucose levels to confirm the problem or is this based on symptoms?
i only ask because i used to get a lot of odd symptoms - incl fatigue, brain fog etc after eating - and its possibly related to post prandial somnolence - but i don't think it was directly related to blood sugar, in my case, as mine was usually all within range.
no supplements of any sort made any difference - with the possible exception of Betaine HCL which may have helped just a little and many made it worse.
my feeling is the digestive system is just heavily disrupted with these lyme related illnesses, and everything related to it, including insulin response, other hormones, liver detoxification pathways, gall bladder, gut permeability, etc etc
it did however get a great deal better when i switched to a ketogenic diet .
so it may be better to think in terms of put less things in rather than more - while the system is still super reactive.
carbs in particular triggered mine to be worse, fibre to some degree also, probiotics and pre-biotics also - basically my system didn't like anything going in that fed the existing gut bacteria, added more gut bacteria - or even just caused changes in the prevalence of some vs others.
there are a few herbs used to help increase insulin sensitivity - but i don't think that is what you want - as the condition can involve a kind of over reactive insulin response already.
