I spoke to my ostomy nurse who said it was a hightened level of the digestive enzymes or juices that are produced when the GI has to deal with breakin down hard foods - nuts, corn, and for me I realize that I had some coconut shreds in my oatmeal that morning. She said that was a no-no for me (although I have eaten that before). And often the body is trying to eliminate more solids slowly while the digestive fluids are rampant in the stomach trying to break it down.
I am not sure this was the case, but that is what was explained to me as the science of this. The caustic digestive juices break down the barrier ring more quickly. And she said the foods that cause this can be different for different people...so it is not an exact science generic to all people.
