Those blood tests are crude, they just measure inflammation anywhere in the body. IBD (that's inflammatory bowel disease -- a category for Crohn's and UC together, and different from IBS -- irritable bowel syndrome.... very confusing, so I wrote it out) gets better and then worse in people... so it can go in remission and the tests will show up normal but you still have the disease. It's usually not in the stomach though, and when people are diagnosed they usually are having symptoms and those markers are up. So, hopefully it isn't that....
Regarding anxiety, you have had surgery and he had surgery, not that long ago.... wondering if maybe his tough exterior is hiding some interior stress about
that or something else?
I think there are both skin and blood tests for the allergies. I'm not sure which ones they had, I could ask but probably more helpful for you to ask your doctor. The soy allergy is actually stressful for him, as soy is in almost all processed foods...... if it's a simple allergy, I hope it's for something easier to avoid (course, avoiding processed foods is great, but his family didn't do that, so feels like a big loss to him).
