Have you tried any other digestive enzymes, other than Gas X perhaps a more broad spectrum digestive enzyme may help such as with bromelain and even others. I know personally I found skipping meals actually increases gas, it's better to always have something running in the system, at least with myself. I know myself I do a lot better with rice, potatoes and meat based protein over plant based, and some well cooked veggies seem fine. I seem to handle goat milk fine as well, but cow based dairy gives me major gas as well as gluten and fruit juices.
SIBO is a possibility if you haven't yet looked into that, diet alone may not be quite enough and may need a round of antibiotics in combination to clear that up.
