I'm voting for the St. Matthew Passion, especially today. Then.... hmmm... the late Beethoven quartets, esp. op. 130-32, followed by The Marriage of Figaro. For something a bit "fresher" you can't go wrong with Wozzeck! Followed by those old standbys Le Sacre de Printemps and the Bartok Concerto for Orchestra.
I love all of that.
