Dave, my experience was very similar to yours except my post surgery pathology was G7(3+4). My PSA became detectable 2 years post op, and slowly rose to .8 at the 3 year mark, thats when I pulled the trigger. I did my SRT and HT at MSK and finished HT in Feb 2108.
I had to look at the Patient Portal to recall, and I found that with my last shot a 3 month shot, in Feb 2018, the Lupron was out of my system by May 2019. it was October 2019 when my T level finally rose to 97, out of the Castrate Level, of , I think , 25. Before that it remained in single digits. However, the last test before that was April 2019 so it was probably above 25 before October. It got to about 250 in May 2020 and stayed there for a year, then dropped to 200-210 in May 2021. After that it headed up and finally in November 2022, it was over 300 and it's been around 300-320 ever since. My baseline was an already low 322, prior to starting ADT.
Keep in mind though every one is different. My RO, Michael Zelefsky (who is no longer at MSK) told me that after being on ADT for 6 months, it generally takes about 6 months for T to start rising, but he thought mine would rise sooner (don't know why), turns out I was later than most.
The hot flashes subsided slowly over time, I honestly don't recall at what point, but I noticed a definite difference for the better around the time I got the 97 reading.
I never noticed loss of muscle, I had not been working out at the time, and the fatigue for me was never too bad.
Wish I could give you more detail, but it was 5 years ago, I never kept a journal, and thankfully (so far) it's a distant memory. I wish the same for you.
