Your "high 7" is the only alarm for more concern than others with a post-surgery pathology that indicated encapsulation.
My understanding is that with the "high 7," you will get PSA's more often than others with a "6" for some time.
Keep in mind that the first -
so soon after a prostatectomy - PSA might have some residual PSA readings - and that influence -if found- will go down.
At this point, given your fairly rapid recovery from incontinence and noe indication of capsular penetration:
"You gotta, accentuate the positive and eliminate the negative and latch on to the affirmative and don't mess with mr. in-between...."
That is to say, until you find that your physician tells you that you need HT &/or radiation (My understanding is that chemo will not be an option.),
Keep your 10 and 20 year plans up-to-date!
