From a recipe: Italian Eggplant

I'm with David on the eggplant!

 

You just need to know how to cook it. If you use it as a noodle substitute in lasagna, you can't tell the difference.

My favorite is still coated in cracker or corn flake crumbs, and cooked in a skillet or on the George Foreman.

I think if you keep trying,you will find a way to cook it that tastes good.

tofu = double yuck.

goodlife, if you left the eggplant out of that recipe, the rest might be tasty!

Try componata (sp). Great spread of crusty bread or crackers. You should also try puttensesca sauce on pasta. Google it.It'sgreat.

Those of you who hate tofu may want to give this a try. Maybe you will still hate it but I will just say that my 21-year-old son, who hates practically everything that isn't meat and potatoes, likes it.

Tofu in Spicy Peanut Sauce

- Brown a small onion, a couple of cloves of garlic and a bit of diced fresh ginger in a pan (in a bit of olive oil).
- Cut firm tofu into small cubes and add it to the pan, cooking until it is crispy on the outside.
- Add a few tablespoons of soya sauce.
- Add a couple of tablespoons of natural peanut butter (the kind that is just peanuts).
- Add a couple of squirts of hot chili sauce (to taste, I like it spicy)
- For color and nutrition you can add some cut vegetables such as green and red peppers (sometimes I add broccoli because my son wont eat peppers).

Serve over rice

BTW,  i love eggplant if it's prepared properly but it's not a vegetable i cook very often.  eggplant parmagian is delicious but probably only slightly healthier than eating whale blubber...just like most italian food .

ed, leave it you to take it personal to a particular state, plenty of overweight people in all 50 states, you trying to make some kind of racial or hate statement against SC?  I belived you just "flamed" me personally.  I may have "flamed" tofu, but talking bad about a food isn't against any rules, besides, tofu is an inanimate object, doesn't have any feelings.

Here we go again.  

In high school, we learned a Latin phrase "de gustibus not est disputandum." (there's no arguing about taste)

The Romans apparently knew this 2000 years ago, but we're still doing it. Maybe food zealotry should be outlawed on this site just as religion and politics already are. It's pretty clear that food faddists sometimes turn their food beliefs into a pseudo religion, and those who don't agree with them are judged guilty of gastronomical sin, or ignorance, or both, or they're apparently insulted for where they live.

The thought of eating tofu or even eggplant makes me gag. I'd rather enjoy my meals, eating a sensible diet that I like, than eat a diet of jellied soy.

But, if you like it (or even if you don't but think it's doing something for your health), more power to you.  That doesn't make you superior in any way...just different.

Mel said he was eating the first meal of his new diet and then the ignorance began, and you pal were part of it.  first it was tofu and then it was eggplant and tofu.   a better comment would have been "enjoy your meal" or maybe just not say anything.  please spare me the sanctimonious posturing yet again.  solomon you ain't.

Ed, I think this is the second time in a week that you've taken it on yourself to make some insulting response to something I said.  I don't know why.  In this case, it was to something I didn't say!  I was not "part of it."  My only comment was the one toward the end of the thread, in which I said that another thread was turning nasty.  But, hey, thanks for the instructions on what I should have said. 

So, I'll just say again, as I said in my previous post, tastes vary from person to person.  if you enjoy foods such as eggplant and tofu.....go for it.  By the way, I'm from Illinois if you want to Iinsult another state.  And you're correct, I ain't Solomon....he died many years ago.
