I have Celiac Disease and also live in a small rural town in BC. I find it easy to maintain a gluten-free diet because I mostly eat whole foods.
My diet consists of fruits, vegetables, pure meats, fish, eggs, rice, most cheese, and that's about
it. Lots of food is naturally gluten-free.
I have always loved curried chicken -- it's gluten free (I always check the ingredients in the curry powder because some of the brands do contain gluten).
I don't eat replacement foods for bread, donuts, pie crust, pizza, etc.
Since my diagnosis last November, I have lost 20 lbs. I feel better now than I have ever felt in my life.
PS Chapman's Ice Cream is gluten-free (most flavours) and so is most high quality chocolate. MMMMM Chocolate.
