Check to see that the tests were done at Promethius Labs or another lab recognized for celiac testing. Many labs do not get it right. Also, if you stopped the glutens before the test, your body may have cleared itself of the antibodies(?) for which it tests, and would cause the tests to come back negative.
I believe it is worthwhile going to a gastroenterologist instead of a primary care doctor for diagnosis. They look at things differently. A gastroenterologist is more likely to know that you can have some of the symptoms without all of them, and is less likely to treat you like your problems are psychosomatic. I had pain/sleep problems and other issues for a few years before demanding to see a gastro. He did a scope and some tests, advised me to try a gluten free diet, and my problems improved for the first time!
Ask your doctor, but I believe it is worth trying to go gluten free for a few months. It is tough, and for a newbie, I would recommend Chex cereals and Bush's beans as teh primary foods, along with fresh fruits and veggies. Udi's makes gluten free bread products if you can find them. It is really tough to go gluten free, especially for a newbie, because so many products contain gluten and are not required to label for them. Even poultry can contain gluten in the fluids they inject for moisture and for self basting.
Many celiacs also have other food sensitivities, especially to milk, so you may not notice an improvement until you get the other item out of your diet.
Last, try a probiotic that does not have gluten or dairy and see if that, along with your diet changes, helps you heal. I use Align.
