I hope this is okay, I just wanted to share a recipe that I took from working at this sweet cafe years ago, I made it gluten free!
2 Cups Brown Rice Flour (I use Bob's Red Mill brand)
2 Sticks Butter
1 & 1/4 Cup Chocolate Chips
1 Tsp Vanilla Extract
1 Tsp Baking Soda
1/4 Tsp Salt
1 & 1/4 Cup Brown Sugar
1 Egg
1 Cup Gluten Free Oats (Bob's Red Mill) (Optional)
Directions:
Preheat Oven to 375 degrees.
Soften two sticks of butter for 10 seconds in microwave.
Mix brown sugar, butter and vanilla extract in a large bowl.
Beat in Egg.
Add flour & oats, baking soda and salt (not all at once) and continue mixing.
Add chocolate chips.
Form 2 inch balls (flatten them a bit) on the pan.
Bake for 10-12 minutes until golden brown.
Makes 2dozen (24), live freely, enjoy!

For years i've made the recipe with flour and tonight I tried this recipe by using rice flour and a cup of oats, came out perfect, tasted identical. I swear this is a great recipe for oooey gooey soft and warm
cookies, I wish I was the one who actually came up with it.
