My DH can't have dairy, gluten or a bunch of other stuff. So he makes his own "cheese" by mixing a bunch of dairy-free butter with mashed potatoes. It won't melt when cooked, but it does taste pretty good according to him...
Other low protein gluten-free snack ideas:
Raw fruits & veggies - wash & cut them into easy-to-eat pieces and store in the refrigerator in a zip-loc or other food storage container with a sprinkle of filtered water to keep them fresh. This way, they are easy to just grab and snack on without much preparation fuss. Use within a day or two.
Gorge Delights makes all-fruit snack bars. High in fiber, so it helps to make you feel full, but does not have a lot of protein in it (all-fruit versions are 1g or less per bar). My DH loves these bars. Check them out at
