Not sure if wheat allergy or celiacs, or what

I have a long history of all sorts of curious things.
IBS
Positive ANA (speckled pattern), but gone now
I ended up in the hospital with colitis recently
But the most surprising, is that lately, after cutting out wheat from my diet, if I accidentally ingest it, I get an itchy mouth, throat, and my nose goes numb (I've never heard of the numb nose, and can't find anything about it).
Today, I had vegetable fajitas as a Mexican restaurant, and had the itchy mouth, numb nose, and now, hours later, I have a couple of blisters in my mouth.

I've had a colonoscopy and endoscopy, but I have no idea if they did a biopsy for celiacs.
I've had a skin allergy test come back negative for wheat.

So I'm at a loss. Anyone have the numb nose?
Anyone have a clue what tests I should ask for at this point?
