I am sorry to hear your husband has severe UC, it is a bit of a nightmare - but have faith - he will get there.
First of all - where are you from? Second - what meds do they have him on?
I will try and help as much as I can. Yes, I do believe stress is a big factor with UC - but please keep in mind, this is solely from my experience.
The food issue was really, trial by error. My first specialist wasn't much help - so basically I went and learn't as much as I could, I wanted to make myself better. Share determination is a big factor.
So we will just get down to it
Some of it may sound silly - but it worked for me.
Keep a food diary of everything you eat - including the fluids he drinks - sometimes it was the combination of foods - so I swear by the food diary.
I would look at food before I ate it. I would look at the consistancy, was it heavy looking or light / fizzy / spicey /pretty much I would break it all down and then picture how hard would the body have to work breaking it down.
Example: fizzy drink, it has alot of fizz in it - so it's going to be full of gas, which will hurt the bowel.
Nuts: you have to chew to break them down - but they still have jagged edges, which still has to go through the bowel, if he must eat nuts, have almonds but really chew them.
Fruits: I would not eat anything with the skins on. I would find out about the acidity levels.
For instance "banana's were ok, grapes a killer". Cooked apple ok, normal apple, a killer.
I stayed away from alot of carbs, glunkie heavy foods.
Small portions are the key and simple foods, gradually you build up the portions, but don't rush it.
I had plain food, if that is even possible anymore.
Nothing with alot of fibre - watch that, because something as simple as lettuce has fibre in it.
Nothing with seeds
Nothing with spice - if it burns going in, trust me its going to burn more coming out.
Not alot of dairy products - but then different countries make it hard. I can eat cheese in NZ but not in america.
No coffee / alcohol - if anything I would have tea if I was hanging for something like that.
Nothing with alot of preservatives.
No takeaways what-so-ever.
As horrible as it all sounds - it is so worth it - I got on top of it - and I have had severe uc for 8 yrs and I am in remision, it never goes away, but I can basically can eat everything now - but logic always plays a part, curries (hot) spices still do not pass my lips. I wasn't paying attention the other day and ate an apple (kinda soar one)and a load of fruit and my stomach reminded me that I should'nt do that LOL...too much fruit went in. Doesn't mean you have to be constantly watching, but if your aware of it, it becomes a natural thing to do.
