I just wanted to post another update with this. I have been traveling a lot and havent been around to read much lately, but I am still in remission thanks to this diet change. I am doing so well and feeling so great that I am mostly eating healthy foods now. I am believing so much in food for nutrition and healing that I do not want to eat junk anymore. I am interested more in fruits and vegetables and the vitamins they can provide my body. I have a colonscopy coming up in Oct and I am very curious to find out what my Doc will see. Its been over 2 months now and I havent been this healthy since before UC. I continue to be amazed with this and again I have to express my eternal gratitude to this site and CfromUtah for bringing it up.
I've read that magnesuim is not absorbed well from a supplement. The body does a better job getting it from food than pill.
Seeds, for those afraid to eat them or with known issues with them, you could try putting them in a food processor and purering them into a dressing for salads or sandwiches.
