I don't know if it would be considered a large amount, but I do eat raw vegetables and fruits most days, unless I'm flaring badly, then I try to stick to easier-to-digest options. For the past year or so I've had just mild inflammation and minor symptoms and I typically eat a lettuce salad every day, sometimes raw carrots or broccoli or cauliflower, tomato, and usually about
two fruits a day -- a banana, apple, orange, pear, berries, avocado or kiwi usually. I eat a lot of cooked veggies, too, mostly potatoes, beans, onions, green peppers, asparagus, squash. I don't eat meat. I eat a couple servings of dairy a day, usually yogurt, cheese or milk. I often have tofu or some other type of soy product. I eat a fair amount of wheat and other grains as well.
