Agree with both of the above. I'd add you should also use protein powders and meal replacement shakes you find in body building sections of health food or drug stores. A whey protein or egg white protein would be preferrable over soy. Eat small, frequent meals rather than a few large meals. Five or six meals/snacks a day is ideal. You want to keep the body constantly fueled and you may need WAY more calories than you think if you're a natural ectomorph AND you have UC. Ectos have a high metabolism and have trouble gaining weight or putting on muscle mass. UC means you may have too fast transit time and your gut's not properly absorbing nutrients, so it's a double whammy.
You don't mention if you work out or not, but a heavy weight training program is key in putting on muscle mass, as opposed to just gaining fat. Ectos benefit from slow, heavy training, once or twice a week per body part, and cardio should be reduced or eliminated until you get back up to your target weight.
