There isn't any one definition, because literally processed food means food that has gone through some sort of processing. So technically, you could consider a peeled apple or a mixture of flour, water, and egg that is used to make crepes, processing. However, most people think of processed food as food that has been "chemically altered through additives such as flavors, flavor enhancers, binders, colors, fillers, preservatives, stabilizers, emulsifiers, etc."
If you have trouble understanding what some of the ingredients are or if it takes you more than 30 seconds to read all the ingredients, then it is probably heavily processed. It could be that you can not digest one or two ingredients. For example, I can't drink or eat anything that has HFCS in it. I also can't eat anything that has antibiotics in it; so that means if I eat meat, then it has to be organic.
