Sometimes it's 24 hours before my gut reacts but most foods/drinks react in 12 hours or under for me.

I support this. Three weeks with bread bring bleeding to my rectum. Quitting bread stopped bleeding in 2 days. I was fooled by the fact that D stopped with bread, only to get into another mess.
It took me 1 year to eliminate some offensive foods (most fruits, bread - i cheat with it from time to time, yoghurt, all nuts except almonds, white wine, pork and so on).
It's a hard job because it takes days - weeks - to recover from a flare and during that time even if you eat the right diet you still have symptoms. Or it takes days/weeks of eating an offensive food that could put you in a flare (for example apples for me).
I keep a dayly journal in wich i write all that i eat, my gut reactions, my joints reactions, my state of mind, my energy levels, my skin issues...
I also try to eat for 1-2 weeks the same meals and change the diet only one food max two per week in order to see if there are offensive or not.
We all react differently to same foods unfortunately and what works for some of us does not work for the others and viceversa.
