Yea, the UC diagnosis sucks. But you seem to have a great attitude about it.
I would definitely recommend you listen to your gut - perhaps start a food journal, if you don't already know what foods you can't tolerate well.
From all I have read, and I should tell you that I am a newbie to this too (diagnosed in sept. 2010), most offending foods are: Dairy, Wheat, and during a flare you're supposed to stay away from fruits and veggies. But here again, it depends upon you and your gut.
I would definitely recommend adding Probiotics. I use VSL #3, as they are made for UC especially, with 450 billion cultures.
And to add a good multi-vitamin, Krill Oil supplements.
I too, have been losing lots of weight, so I've been adding protein shakes to my diet. And to each of those, I add L-Glutamine 20grams (it aids in colonic repair).
If you are using any dairy milk, I would suggest you switch over to Almond Milk. It tastes delicious and is non-dairy, non-lactose.
