What makes it even harder is the GI doctor will NOT discuss what I should/should not eat but just said to go on a "light" diet. Fortunately at this point I realize what I can eat without further pain, yet my constipation is starting in again without the fruits and vegetables! Can't wait to get the colonoscopy over with.
One of the most important issues with GI problems is to find a good (better yet, excellent) GI doc. The colonoscopy is a great idea.

Well I will be patient, but I wish my GI doc could give me exact menus of what I should eat after my testing is over with. He gave me but maybe 5 minutes of his time at my last appt. but switching my test from an endoscopy to a colonoscopy was a wise choice.
My experience is that the GI docs know very little about
proper diets. It took me ten years to get my doc to take that into account. Proper diet in your case is very important.

I'm about ready to just fly to FL to go to the Mayo Clinic and get myself treated properly for my stomach issues. I feel my care is haphazard at best ... !
If you've the possibility, make an appointment with the Mayo, they know what they're doing.
