It's great that you've done research and know about your UC - most of us have to be our own best advocates.
You definitely need to find a doctor who you can talk to, who can give you options as far as treatments, and who can answer your many questions.

I am concerned you are not getting enough protein and nutrition, and amino acids are the building blocks of you.
Is there any way, you could tolerate some grilled fish or meat? However, I would recommend you eat it without carbs. I am a big proponent of food combining, which if you do not do correctly can create havoc on your gut.
But also, you mentioned probiotics, I would recommend VSL #3 - it is the only probiotics made for UC, with 450 billion cultures, and if you can get a prescription from your doctor they make it: VSL #3 DS (double strength).
You may want to get your blood work done, if you haven't already, as you may be anemic. Also, whilst they do it, have them check your vitamin d3 levels ( there is a correlation between IBD and low vit. d levels).
Also, drink lots of clean water - very important.
What about rectal meds? Canasa suppositories or enemas?
