I am concerned you are not getting enough proteins, and amino acids are the building blocks of you.
From what I've read the low residue diet still consists of dairy, wheat, and gluten - perhaps that's why you havent' seen any real difference in how it makes you feel?
Perhaps you would be better off with the SCD - specific carbohydrate diet, no? And if that's too drastic for you right now, I would suggest you at least be dairy and wheat and gluten free and see if that makes any difference.

Now, regarding proteins - you still need them, they're important, as well as good fats too.
You said meat didn't agree with you, is that beef, lamb, chicken? There's bison, which is healthy.
How about fish? Grilled salmon, steamed lobster, flounder?
Canned sardines are almost a perfect food because they would give you protein and omega 3's too. Have you given those a try?
Do eggs agree with you? I can't eat the egg whites, but do tolerate the egg yolks - which are full of choline, important for brain function.
Also, you could add: almond milk instead of regular milk, it's actually quite delicious.
You could try sheep or goat cheeses instead of cow cheeses (some can handle the sheep and goat much better than cow protein). Manchego is a hard sheep cheese which is delicious.
Lastly, I would suggest to supplement your intake with a good quality whey protein shake or 2 a day. Granted none of these things may serve to have you put on weight, but the goal IMO is to get you some healthy nutrition which you'll be able to tolerate.
Be careful with whey proteins, many are filled with sugar and junk. The only one I can recommend to you is the one I use myself: Dr. Mercola's Pro-Optimal Whey Protein - it's the only one I know of that comes from grass fed, no hormones, no antibiotics cows, and that already contains digestive enzymes to make it easy on the gut. I love his chocolate flavoured one, and make myself 2 of these proteins shakes a day at least.
