You poor thing. When I was on prednisone, I wanted to eat everything and I DID. I gained a lot too, I was miserable. I think the best thing to eat, if you can tolerate it is probably nuts. Almonds are great and good for you. Avocados are good too. I make a salad with just avocados, salt, pepper and some lemon. Not much of a salad but it's good and healthy. How about
fruit, bananas, apples, mangoes? Nothing stopped my weight gain except getting off prednisone so don't beat yourself up. You will get back on track when you're off the evil prednisone.
Eggplant parm is a good veggie meal but it's a pain to prepare.
