Switching to lactose-free non-fat or low-fat milk solved my major problem with dairy. I do fine with low-salt cottage cheese, non-fat or low-fat natural yogurt, and the Swiss cheeses emmentaler, gruyere, & appenzeller-- which are relatively low-salt, low-fat. Cream cheese I generally avoid-- too rich. I love brie, but it's very rich so I try not to indulge except at the winter holidays when it's readily paired with good bread & wine or champagne. RE ice cream: I'm better off if I don't buy any! It's very fattening, though sooooooooooo satisfying during hot weather. (Especially H/D rocky road or B & J cherry garcia: yum!) Dairy is a good source of calcium for people w/o casein issues; lactose intolerance is easier to work around. / Old Hat (31 yrs with left-sided UC; presently in remission taking brandname Colazal)
