hey susan! sure! it's paleo, SCD, and vegan "legal." if you don't have a problem with eggs, then you can use 3 real eggs in place of the flax eggs. also, it's fine to use all almond flour. i just had a bag of coconut flour i wanted to use the rest of. just make sure it's 3 cups of flour total. and one more thing- i think the cake is sweet enough as is (everyone in my family thought so, too) so that's why there is no sweetener like honey.
Banana Cake ingredients:
dry mix:
2 1/4 cup almond flour
3/4 cup coconut flour
1 tsp baking soda
1 Tbsp ground cinnamon
mix together in a large bowl.
wet mix:
3 large bananas, smashed
2 apples, peeled, cored and grated (i used one medium size and one small apple- both golden delicious)
1/4 cup coconut oil
3 flax eggs (3 Tbsp ground flax seeds and 9 Tbsp water- combine and refrigerate for 1 hour to get a gel-like texture)
1 cup raisins
combine all wet ingredients together in a bowl.
add dry ingredients to wet ingredients and mix together. bake at 350 degrees F for 40-45 minutes in a greased cake pan- i greased it with coconut oil and used a round pan. i've made this cake before and i was supposed to get it out at 40 minutes but i forgot so i got it out at 45 min. it was still perfect and i just used a toothpick to check the doneness.
