I know what I can and can't do. We can pretty much do whatever we want as long as she's not experiencing symptoms and is taking anti-viral medication.

this already. I went down on her, she on me and we had both protected and unprotected sex. I spoke with two doctors about
this (one a PCP, another my GI doc) and they both seemed to think I'm probably okay, as I've experienced no symptoms after a week and did these things while she was in remission. They also both told me that plenty of couples stay together for long periods of time where one partner has herpes and the other does not, regardless of how they have sex.
While I acknowledge what you're saying to be true as means of putting myself at higher risk, it seems like my chances of catching what she has are still at a relative minimum (1-5% likely, according to both doctors) as long as she's asymptomatic. It's just a matter of whether I can wrap my mind around 1-5% over 0%.
