I've been doing the spinach/sunflower seed thing for several years now. I dont tolerate meds of any kind well. Even asacol/lialda just to many side effects that I cant live with. So this high magnesuim/beta carotene diet has been a life saver for me. Once I get in remission from it, like now, I eat spinach about
twice a week, carrots or sweet potato once a week and sunflower seeds or sunflower seed butter 3 times a week. In addition I also avoid processed foods as much as possible only allowing them on occasion.
If I back off of eating the spinach and seeds for to long I start to experience UC symptoms again. Reintroduce them and symptoms diminish again. The longer I stay off of them and the worse a flare becomes the longer it takes for the foods to heal again.
