Mark: Perhaps the reason Dr Stein has no solution/cure is this.
Fructose and tryptophan,add in cooking methods of high heat and you might have a neurotransmitter mess.
I wont go into RAGE,MRP,AGE,epigenetics,insulin, now it just gets worse.
I suspect that from a UC/neurotransmitter perspective, perhaps we dont have to be a overt poor absorber,but so much in the diet even from fruits and perhaps some veggies might be a problem,let alone all the added fructose,and sucrose which breaks down into fructose and glucose. Something like this could easily make IBD idiopathic,and
thus no real cure.
Unless perhaps you look at IBD history,and who eats what,where, when and how.

another question might be do we eat too much tryptophan and or sugar or at the wrong times.
