It could be just something simple like the liquid diet and low calories is simply "easy" on the gut... so lessens food intolerance reactions etc etc leading to a reduction in symptoms and severity. "Low antigen" you could perhaps call it.
It's seems for some diet is a large component of inflammation/Mucus/D/Blood.
Just a thought...
Personally, over the years I learned that I tend to do very well on liquid diets like carrot/apple/orange juice and various protein shakes and smoothies. Just that I can never maintain it, nor do I really want to for long periods. I as well prefer to make my own from scratch to control the ingredients.
