ok. i know some of us on here like to use coconut cream/milk in place of dairy or just because it tastes good.

for the past 2 months, i've been testing different brands and going insane in the process. well, i have finally found the BEST tasting, smoothest coconut milk/cream around.

i just made a batch of yogurt using a box of coconut cream mixed with a box of coconut milk. it is seriously the best yogurt in the world and the consistency is amazing (not grainy at all). i cried as i ate it because i was just so happy. ok, not really.  

i bought it on amazon and it's kind of expensive, but it's free of all preservatives and gums. you get what you pay for.

thanks for the tip. I just got a couple of gluten-free dairy free cookbooks from the library and am in the mood to cook some new things. So you can actually make yogurt with coconut milk? I really miss SCD yogurt and would love a good substitute.

What about coconut ice cream? Ever made it?

we've made both. we consume tons of the stuff. unfortunately my daughter can't tolerate the yogurt (hopefully she will in the future). The ice cream is great. We just make it in the vitamix. We use a type that has no additives - just the milk and water (I think it's 60-40%)

Ha. just looked it up and it's the one we use. We actually get it from the local Chinese grocer - a fraction of the cost of other brands they sell at whole foods etc and they all have fillers. It is really good!

imagardener, i only use the coconut products for SCD yogurt since they are pricey. the bacteria die when you freeze already made SCD yogurt so i just eat it from the fridge. i used more honey and yogurt starter this time and i think that also contributed to a better yogurt.

killcolitis, that's a good idea. i don't know of any chinese grocery stores around me. i rely on amazon for everything. i get it in the 33 oz boxes.

I found a carton coconut cream with no additives last time I went to a local asian market.. I also stocked up on lots of frozen coconut milk and cream. I havent used any of the frozen yet, but I made a HUGE bowl coconut whipped cream with the carton and ate most of it alone at night after I put the kids to bed with a big spoon. It was so good. I added vanilla cream stevia. Ive been craving coconut custard icecream but want the real sugar in it so Im waiting. Im so sick of stevia.

pathogen, omg whipped cream sounds SO good. do you just pour the cream in a mixer bowl and beat it? what brand of coconut cream did you find?

i've only ever used stevia when i worked for a naturopath. she always put it in our tea and for a while i had no clue the tea wasn't naturally sweet. i mentioned it to her one day and she's like yeah, it's stevia. i loved the taste though.

i just looked and its the arroyo-d 100% coconut cream. I put it through my whipped cream charger.. BUT.. Ive also just stuck it in the fridge overnight then whipped it with cold beaters and about 10 drops of stevia.. i also like it with powdered lavender and coconut sugar.. or whipped with a touch of artificial butter flavor, vanilla and 1-2 Tbsp powdered sugar. It makes a whole bowl so in the end you eat about 1.5 tsp of sugar even if you eat 2+ cups of cream. My favorite is to pipe it into raspberries and freeze them on a sheet pan then I put them in a ziplock and just pop a few out at a time.

I've been drinking coconut milk instead of dairy for 2 months, and make coconut milk yogurt as well. At this page some benefits of coconut milk are described. by the way I prefer to make it at home by myself rather than drink store-bought canned coconut milk.

This is the nicest coconut milk I've had. It's expensive, but worth it.
