A lot of people in the beginning of a flare benefit from doing a low residue diet or the BRAT diet. (You can google these for specifics.)
Sometimes in a flare... everything affects it... so the low residue is a good place to start and see what you can tolerate. Slowly adding in well cooked veggies or fiber.
Liquids (broth, G2, watered down 100% fruit juice) and Kefir smoothies (either drink from the jug or blend up a concoction) was pretty much all i ate for months. Also plain mashed potatoes, white bread, saltines...
There are a lot of diets that boast helping ulcerative colitis symptoms. Not everyone has success with these. Gluten Free, Dairy Free, low FODmop, Specific Carbohydrate Diet, Paleontology...
Personally, I am not affected by dairy at all (benefit of being from Wisconsin im sure) but I do try to minimize my gluten... though I happily eat pretzels, saltiness and white bread if im craving a grilled cheese.
Everyone is different. In so many ways. Every day is different! :)
Also; just curious:
What kind of doctor are you being treated by? Have you had a colonoscopy?
