According to the science a lot of people will have problems with gluten (not just wheat gluten since gluten is just a catch-all name for the protein. In wheat it is actually gliadin).
For many people, eating wheat (or any grains) is a great way to trigger gut complaints like UC because you will eventually initiate the molecular mimicry that begins the auto-immune process.
I live in Australia, and we (and the US too) are so far behind in the gluten-free lifestyle that it is ridiculous. The country that isn't? Well, that would be the one that you associate with wheat eating - pizza, pasta etc... yep, Italy.
It just so happens that Dr Alessio Fasano, an Italian clinician working out of Maryland University is the world's leading authority on Gluten sensitivity. It is amazing what his team came across over the last decade. The diet is not a fad... there's huge amounts of medical science behind it.
