I was tested for celiac in 2007 and nothing turned up. I've had multiple endoscopies with no indications of celiac disease.
If I ate a roll at a restaurant I'd have diarrhea for 2-3 days following. It was quite a shock the first time that happened to me (accidental exposure).

Of course it is possible to have a bad reaction to glucose if your particular body doesn't like glucose but don't go believing the one sided extremist viewpoints of the conspiracy people like you are following some kind of religion based on faith. These extremists twist and jumble up the truth no differently than those who twist and jumble up the bible in their attempt to make people believe whatever they want. And, you are right, it is possible that you COULD make yourself even more sensitive to it by giving it up. It's one of those where it may or it may not. Believe what your own body tells you, not the extremists who are pushing their cult agenda which really doesn't even have anything to do with UC. One more thing. Foods may be tolerated differently at different stages of disease because when the colon is damaged you may not be able to eat things that you can eat when your colon is in better shape. For example: You MAY not be able to tolerate gluten with a bad colon while you MAY be able to when your colon is more healed. In most cases it doesn't have anything at all to do with whether people in general should be eating gluten or not and their is absolutely zero evidence that gluten actually causes UC. Nobody anywhere knows what causes UC.
I don't think imagardener2 and kazbern are extremists who “twist and jumble up the truth”, and are “pushing their cult agenda”. They are sincerely trying to be helpful. They have always acknowledged that diet may not be for everyone.
Just because you don't agree that is no reason to insult them. They are only trying to help others by sharing what they have learned from their years of experience with this darn disease.
