I am way to skinny now and need to gain weight, I have ulcerative colitis in remission, hyperthyroid, adrenals glands are shot, gluten intolerant, soy intolerant, lactose intolerant, cannot have corn based and no barley based. Any suggestions? I need to gain a minimum of at least 10 lbs.

you gotta eat a lot of calories from whatever foods you can eat. if you are in remission, you should have some foods you know you can eat by now. add oil or butter to everything, use full fat coconut milk/cream, eat fattier cuts of meats, lots of mayo, BACON, starches like sweet potatoes, plantains, tapioca/rice, scrambled eggs in lots of butter with oil drizzled on top, whey protein shakes.

I'm in the same boat. I am currently consulting with a nutritionist. A good thing she told me is to write everything down to keep track of your calorie intake. A good app I found is my fitness pal. Google it

Mirtazapine will make you gain weight, if you feel like taking an antidepressant.

Coconut oil, cocoa powder, ensure (lactose/gluten free) ... lots of peanut butter. Personally I don't recommend going the unhealthy route and eating loads of bacon and butter. The natural route like with coconut oil is a great healthier way to gain weight. Plus it's great for you hair and skin!

personally myself, I have no problem with you not eating tree bark - or anything else for that matter - but I do take issue with you calling out butter and bacon fat as "unhealthy" or making it appear as you believe they are "unnatural" - huh ?

I agree with everything bananagirl said. Also, if you can have coffee, try 'bulletproof coffee' (google it). In my version, I add butter, coconut oil, honey and a little cocoa powder. You need to mix it in a blender to make a nice foam on the top. I try to have it at least once a week to get in some extra calories/fat. And I find it delicious too.
I too would love to gain 5+ pounds, but it isn't easy. I should probably start a diary again to keep track and force myself to eat a little more.

I'll join the chorus, eat anything you can to gain weight. Double the portion sizes you eat, add in extra snacks between meals, or even add in an extra meal during the day. Gravitate towards foods that are high in fat and protein for best effect: peanut butter, butter, or whatever you can stand. You can gain weight but it is going to be a slow process, perhaps a 1/2 pound a week, so you got to keep it up for a long while to successfully add on 10 pounds.
