The main benefit of broth comes from the soup itself. One can argue that the veggies are unnecessary and are added for flavor. The batch I'm making at the moment has garlic salt, back pepper, and vinegar to draw the minerals out. It's not just the amino acids glycine and proline, but the collagen that is good for the skin, hair, nails, colon and other organs.
