Most of the moon face issue is caused by water retention, not fat. It does help to limit salt intake, however that can be really hard to do to a point where it has an effect. There is so much sodium in packaged food, so making food completely from scratch is the only way to do it. I homebake all my own bread and crackers even to avoid salt. As counterintuitive as it sounds, drinking tons of water helps to reduce water retention (Flushes out excess sodium, thus reducing your body's desire to store water). Make sure you drink water though, not juices or other beverages that contain sodium.
After my last round of prednisone, my moon face started shrinking noticeably within a few weeks. I'm currently back on Pred, and my moon face gets bigger or smaller depending on how well I do at avoiding salt and chugging water. If I cheat and spend an evening out at a restaurant, eating and drinking, I can feel how enormous and puffy my face is the next day, but it gets better after chugging water for a day.
I don't think it's possible to avoid moon face entirely, but you can definately make it better or worse.
