imagardener, you have quite a list! Can you expand a little on what foods you avoid because of the fructose problem? I really rely on fruits to satisfy my need for something sweet/desert-y and I wonder if maybe I eat too much or the wrong kind…If you have no symptoms from fruit then don't think of eliminating them. I ate a lot of fruit before UC, was a vegetarian in fact. Some fruits have more fructose in them than others. I really miss pears (my fave) and cherries (oh cherry pie, sigh) but a well-behaved gut is more desirable than any food it dislikes.
Honey is a source of fructose that I avoid also. As bad as they say white sugar is it causes no gut symptoms so that's my only sweetener. Really read labels and stay away from any sugars ending in -ol, they are evil, sugar-alcohols I think.
Learning to make desserts without wheat and dairy is interesting but there are so many books out on the subject that it's obvious other people have this problem too. I just made coconut milk panna cotta and it is heaven. I have not eliminated all fruit because I have a mulberry bush and make jam. Gotta live a little
