Definitely sounds like you need to get back to GI for proper testing, don't put up with this - with years of UC we can put everything down to UC so do make sure your stool is tested for all pathogens and parasites to rule out any infection. Your inflammatory marker, CRP isn't high, so ask for a fecal calprotectin test which looks for inflammation via the stool. ESR is just another marker, not necessary really.
Your MCV seems very low, not chance it was 100? I'd ask for a retest on that and further iron studies if that was not an error. I'm not an expert on MCV, mine was high while on Aza/6mp which I'm told is common on those drugs, otherwise high is a sign of B12 or folate deficiencies possibly but I don't think low is.
Sounds like you need to be stepped up to the next strength of drug. Hope you get some relief soon.
