I also do not tolerate fiber/roughage and/or fruit well either. Easy foods to eat with few problems are protein (meat, no seafood) and low fiber veggies. Chicken and turkey can be done 1,000 ways, never boring for me and potatoes are sooo good so many ways. SCD doesn't allow potatoes I think and some paleo are no-potatoes. My gut rules and it likes potatoes but not rice or other grains, no wheat or oatmeal.
I gave up on "name" diets and slowly figured out what my gut tolerates. I tried SCD twice with years between tries and didn't get good enough results. Took a while to nail my OK food list but well worth it. Some foods on my "out" list are now semi-tolerated. I was lactose-free for quite a while but now it's not that big a problem.
You need to keep a food journal with food eaten on one side and day's symptoms on the other side. It's not always a one-to-one connection. Bread and gluten took me a long time to see it was a negative.
Don't listen to me, listen to your gut.
Some people don't get positive results from diet modification but if you try it with no good results that is good information too.
