Generally low fiber (as it's abbrasive and bulking which is the opposite of what you want when flaring), and raw is much, harder on the system than cooked is.
If it were me, I'd bring leftovers to warm up in the microwave. Make the other guys jealous by warming up chicken and potatoes in a Tupperware from last night's supper, or something similar. You said you go inside for lunch, so perhaps that is an option?
Some of us intentionally don't eat a lunch or breakfast when flaring badly, only a bigger supper. But given your physical labor that may not be an option.
And get some prescription rowasa enemas for nightly use to heal yourself fast, ask your gasteroenterologist for a prescription. I don't care what state you're from, results are what we're after and they work well!
You might want to take emergency supplies with you, just in case a ziplock bag with a change of underwear, extra tp, and wet wipes. Accidents happen with extreme UC urgency. The only thing worse than a public accident is not having a change and cleanup stuff...
