Had a clinic appointment today and updated them on my current symptoms. But, I forgot to tell them about
the brain fog.... probably because I have brain fog!

That would explain it. You could have tied a string on your finger but you would have probably forgotten why you did that. Been there. Done that. Once I wrote WW25 on the calendar and tried in vain for a few weeks to figure out what the hell that meant. about
a month later my wife finally figured it out. It was an online coupon code for Papa John's pizza.

I think I know whats causing your brain fog. Certain compounds called salicylates (like Lialda) might make you foggy. Try going on a low salicylate diet for 3 days. A good combo is cabbage, potatoes, and black beans. The worst is spices and condiments. Read here for more:

Remicade does this to me. My new dosage starts today. I wonder if I'll find my way home afterwards?

To recap my experience, I suggest reducing dietary fat to help with IBD brain fog symptoms, it helped me.

Sam, I didn't delete them but I believe I know why they were deleted. As you copied/pasted the same exact story into 1/2 a dozen old posts. That's pretty spammy and goes against the forum rules. The most common reasons for brain fog are drug side effects on the central nervous system or deficiency status. The most common nutrients being depleted in IBD patients are iron, B vitamins (especially methyl-B12 and methyl-folate, which are not just for carb digestion but also co-enzymes in detoxing), n-acetyl-cysteine, glutathione, and electrolytes. The most common electrolyte depleted in IBD is potassium, due to regular diarrhea, bleeding, and poor absorption.
I use NoSalt which has 600mg potassium per 1/4 teaspoon (1.2mL), mixed in food or water. A lot of the electrolyte packets on the market have too much vitamin C for the amount of potassium they offer, so you end up overdosing on vit C to get what you need. Potassium tablets tend to come in 150mg or less which is just not enough.
