Even before UC, 40 minutes after a cup of hot coffee, I'd be on the toilet. Studies have shown that coffee (decaf and caf) stimulates the distal colon. Last I checked, scientists don't know why, just that it has a laxative effect and it has nothing to do with the caffeine. I have also always found that hot coffee causes bathroom trips way more than cold coffee.
I have given up coffee myself, because I do not need anything sending me off to the bathroom. You might want to try different teas -- I don't like a lot of them, but I love spice teas and chai with strong flavors. Diet Coke is a thing for me, though way less than it used to be. Also try sparkling water with a little bit of pure juice for flavor (I love my Soda Stream). For some reason, I find the carbonation very stimulating and awakening.
